Ingredients:
4 inches of Ginger - cut into (¼ by 1inch)
2 whole Garlic - cut into small pieces (1/4 by ¼)
1 whole Onion – Cut into cubes
3 lbs of pork stomach
4 pieces of (pork bun gut) yellow intestine looks like sausage
3 spoons of kasubha mix
Fish sauce or Salt (use your judgement)
10 pieces of boiled egg (peel eggs) or one can of Quail egg ( wash and set it aside)
3 or 4 pieces of lemon (cut and add patis and sile) set it aside.
 

 

Directions:
1.  Wash and boil the pork stomach and pork bun gut into a large container
2. After the first boil, wash the meat, replace the water and boil it again.
3. Repeat # 2 for the third boil, add pound ginger or baraniw (use your own discretion to minimize the smell of the meat).
4. Once the odor are fully gone, you can keep boiling the meat until it’s fully soften.
5. Wash, drain and cut the meat into ½ by 2 inches and set it aside.
6. Wash and cook the rice and add 7-8 cups of water (use a large container-KALDERO).
7. Warm up a large frying fan and add 7 spoons of oil (slow fire).
8. Add the garlic and let it cook until it’s fully brown then remove said garlic and set it aside.
9. Add the slice ginger until it’s fully brown then add the onion.
10. Sautee the meat along with the ginger, onion, and half of the garlic that you just cooked.
11. Let it cook until the meat is almost brown then add fish sauce or salt and msg (optional)
12. Once the rice is almost cook (add water if need be) mix the sautéed meat onto your large cooking container (stir said cooking container to prevent the rice from sticking).
13. Add fish sauce or salt, ground black pepper, the eggs and the kasubha mix and keep mixing your cooking container to your satisfaction.
Note: During the cooking process, it’s always good to add extra water to prevent the rice from sticking to the meat. Extra: If you don’t eat pork guts/intestine, you can substitute chicken wings or chicken legs Let it boil until the dark part (blood) of the meat started to float from your cooking container, drain the container and wash the meat completely and boiled it again, add water and use this soup for your arrozcaldo. Wash and add the rice on said container and the sautéed ginger, onion, garlic . Bonus: Fry a tofu into a golden brown, cut it into cubes and chop ½ onion, 2 cloves of garlic,black pepper, soy sauce and vinegar (tokwa only). Good luck to your cooking.
