Spicy Squid

Ingredients:
12 squid, cleaned
Juice of one lemon
1 green chilli,seeded and chopped
1/4 tsp five-spice powder
2 cloves garlic, crushed
2 tsp sesame oil
2 tbsp peanut oil
1 red peeper,diced
4 spring onions thinly sliced
5 tbsp soy sauce
Directions:
1.  Slit the squid body sacs lenghtways, then cut each into 2-3 pieces, Using a small,sharp pointed knife,score a zigzag pattern on the inside of the pieces of squid.Do not cut right through the squid since this will not achieve the dessire effect-simply mark a trellis pattren in the flesh.
2.  Place the squid pieces in a basin.Add the lemon juice,chilli,5-spice powder,garlic and sesame oil, and mix well to coat all the pieces in seasoning.Cover and leave to marinate for at least an hour,if possible to leave the squid3-4 hrs.
3.  Heat the peaunut oil until shimmering,then stir-fry the squid until browned.The pieces should curl to expose the attractive diamond cuts.Used a slotted spoon to remove the pieces from the pan and devide them between serving plates.
4.  Pour off any excess oil from the pan,if necessary leaving just enought to cook the vegetables.Stir fry the pepper and spring onions for 1-2 min.then sprinkle in the soy sauce and stir for a few seconds.
5.  Spoons the vegetable mixture and juices over the squid and serve at once.....enjoy your meal,eetsmaakelijk eten,buen provecho,bon apetite
****TIPS**** When the pieces of squid are stir fried they curl to expose the diamond cuts.The tentacles maybe used or not as preferred.The choice of cooking oil is important in order to achieve a high temperature and satisfactorily crisp result
